Every counter here still stands roughly where a postal one once did — the verandah, the pillars, the quiet weight of a place people came to for news from somewhere else. We kept the bones of the old post office and gave it a kitchen, a tandoor, and a proper cup of coffee.
The clay oven runs from morning to close. The chole bhature recipe hasn't moved in years, because it's the reason half the room is here. And the counter at the front — where the postmaster once stood — now pulls espresso instead of stamping envelopes.
